Heat oil over medium heat.
Cook the onion 5-7 minutes.
Add the garlic and ginger.
Cook for 1 minute, stirring.
Add the spices. Stir and cook for a minute or two.
Add 1 cup of broth and mix before adding the rest of the broth, lentils and diced tomatoes.
Simmer, covered for 30 minutes, stirring occasionally.
Let cool completely.
Place in large freezer meal bag, remove excess air. Seal & freeze.
Thaw overnight in the refrigerator, or you can thaw it directly in the sauce pan as you reheat it.
Reheat on stovetop.
