Fry the breakfast sausage patties in a skillet until cooked through. Set aside.
Preheat the oven to 325° and grease a 9x13 baking dish with nonstick cooking spray.
Whisk together the eggs, milk, salt, and pepper until well combined. Pour the mixture into the baking dish and bake for 24 minutes or until set.
Cut the eggs into 12 squares.
Layer a sausage patty, egg square, and one slice of cheese between two English muffin slices. Wrap each sandwich in plastic wrap and place them in a resealable freezer bag.
Store the sandwiches in the freezer.
Serving instructions:
When ready to serve, remove the sandwich from the plastic wrap and place it on a paper towel. Heat in the microwave until warmed through.
