Add all ingredients except vegetable broth and coconut milk to a large freezer bag.
Squish together gently to mix.
Remove excess air, seal & freeze.
Thaw.
Bring to a boil.
Turn heat down.
Simmer for 30 minutes, uncovered.
Put through an immersion blender if desired.
Stir in ⅔ cup unsweetened coconut milk.
Top with green onions if desired.
Serve with Naan bread.
